The Place
Xpress are exclusively working with a hotel operator located on the beautiful West Coast of Scotland, looking for their next Sous Chef. This stunning Hotel has 20+ generous bedrooms many with panoramic loch views. The property also consists of a seafood-driven Ala carte restaurant with a separate bistro bar room offering. This property is only about a 2-hour drive from Glasgow and is set in 20 acres of private gardens and beach with access to fishing, hiking and all the outdoor adventures you can think of.
The Job
As Sous Chef, you will be working closely alongside your team and the Head Chef to deliver a first-class product using locally sourced ingredients as much as possible. This is a quality property with an excellent restaurant so working in conjunction with source ability and provenance is an absolute must to ensure the highest standards and continuity of service. Providing both fine and casual dining is a must for the next Sous Chef with the co-ability to write and cost menus for both offerings with the current head Chef.
The Person
The ideal Sous Chef will have a minimum of 4 years of experience in a fine dining environment, possibly looking for a step up from a Junior Sous role that has worked in a similar smaller environment. Preferably with a Rosette background but not essential as the real focus is on the quality of the food, a real foody chef would love this role as you will be part of the menu design and delivery. This is without doubt a live-in position due to location and would need someone that is happy to live on-site preferably with transport,
