Where the proprietors have tried to recreate the outside but inside in a tranquil but quirky restaurant and bar setting, serving from Breakfast through to evening dinner.


The Job


The Hotel provides all day dining serving breakfast time all morning and daytime for the late risers. Straight through to a day time bar menu where you will find good old Scottish classics accompanied with more modern and stylish dishes, so there is a bit of everything. In the evening the menu changes again to capture an even greater number of modern dishes to choose from, and of course there are the obligatory afternoon teas, which in the last few years have had a bit of a renaissance.


The Person


This is a fantastic opportunity for an experienced Senior Executive/Head Chef who has passion in abundance and is driven to succeed. That wants to improve on the weekly sales with a consistent product that will ensure repeat and return custom from the non-residents footfall as well keeping all staying guests satisfied. You will be working closely with the General Manager to guide, inspire and facilitate the kitchen team ensuring the kitchen operates efficiently and profitably. In a nutshell you will have to be able to provide the following criteria. To increase food sales throughout the development and delivery of quality menus, whilst achieving food gross profit margins. As well as developing and growing the skills of the kitchen team whilst maintaining the highest levels of food hygiene and upholding all health & safety legislation.


The Rewards


The salary is on offer for the right candidates is £40,000 with an achievable £5,000 bonus structure in place. All suppliers have been sourced and prices negotiated but if you are the right candidate and can make the bottom line healthier with appropriate purchasing and minimising of wastage this is a makeable bonus.
